Baked Chicken Breast

Baked Chicken Breast with Basil Leaves is another addition to my collection of unwritten recipes. I was about to make chicken fingers for dinner one afternoon last week when I thought of serving Ace a new dish. So off I went to the store to buy potatoes. We don’t have leek so I used spring onion. I marinated the chicken breast (without skin) in kalamansi juice (Philippine lemon), salt, seasoning and freshly ground pepper for about 30 minutes. Added olive oil to the chopped fresh basil leaves and poured over the chicken in the baking pan. Baked for around 45 minutes in low heat.

It is almost done when Ace arrived. He was still outside parking his motorbike when he called in and asked what I am cooking because he smelled it when he’s still at the gate of the apartment. Thanks to the olive oil and fresh basil. The dish smells so good! When my new dish was done, I plated it and had a very sumptuous dinner! We’re so full. It’s been a long time that I felt so full that made us sleepy and I wanted to hit the bed immediately pushing my search for video cards aside. I am just glad the dish turned out very delicious. Ace find the chicken too pale though. I’ll marinate it with sauce next time. :-)
